If a company posts jobs on its web site with a closing (unposting) date will it usually wait until the closing date is expired before calling applicants for interviews or do they sometimes start the process before?

That's the idea. They should start considering people for interview after the closing date.

Starting from the closing date allows them to decide on not missing out on the best available option in the applying candidates... :)
